Beef

Ingredients

 

  • One 4-pound chuck roast

  • Salt and black pepper to taste

  • 2 tablespoons butter

  • 2 tablespoons canola oil

  • 2 cups beef broth

  • 2 tablespoons minced fresh rosemary

  • One 16-ounce jar pepperoncini, juice and all

 

Instructions

 

 

  • Season the roast with salt and pepper.

  • Add butter and oil to your trusty cast iron pan.

  • Sear the roast on both sides until you get a good crust, about 5 minutes total.

  • Put the roast in the crock pot along with the remaining ingredients.

  • Cook on low for 8-10 hours .

  • Serve traditional style with root veggies or shred and make sandwiches with sauteed onions.

Pepperocini Pot Roast

Makes 4 patties

Ingredients

4 pounds ground sirloin (the more fat the better)
Kosher salt
Pepper
1/2 tsp chipotle mayo (recipe below)
Hamburger buns
Thick slices bacon, cooked
Red onion slices thin
Roma tomato slices
1/4 tsp blue cheese crumbles

Instructions

Fire up the grill
Season beef with kosher salt and pepper and mix
Divide into 4 equal portions and make patties
Grill for about 5 minutes on each size
Put on bun and pile high with onion, tomato, bacon, and blue cheese crumbles.
Spread chipotle mayo on one side of bun.

Chipotle Mayo
1/4 cup mayo
1 tsp adobo sauce from canned chipotle chilies
1/2 tsp freshly squeezed lime juice
Kosher salt

Combine all ingredients until mixed well. Keep refrigerated until needed.

Blue Cheese Bacon Burgers with Chipotle Mayo

This is an very quick week night dinner that even the tiniest of ranch hands will love. To cut back the spice, cut the red pepper flakes to 1/8 teaspoon.

 

Serve with rice

 

Ingredients

1 pound  ground beef

3 garlic cloves, minced

¼ cup packed brown sugar

¼ cup reduced-sodium soy sauce

2 teaspoons sesame oil

¼ teaspoon ground ginger

¼ teaspoon crushed red pepper flakes

¼ teaspoon pepper

2 cups hot cooked white or brown rice

sliced green onions and sesame seeds for garnish

 

Istructions

  1. In a large skillet cook the ground beef and garlic breaking it into crumbles over medium heat until no longer pink.

  2. In a small bowl whisk brown sugar, soy sauce, sesame oil, ginger, red pepper flakes and pepper. Pour over the ground beef and let simmer for another minute or two.

  3. Serve over hot rice and garnish with green onions and sesame seeds.
